Blueberry Muffins (gluten free if desired)!

This is a must try recipe if you or any of your family members like muffins!  Since a friend of ours gave us this recipe a couple months ago, it has quickly became a family favorite.  Especially for Kyle since blueberry muffins are one of his favorite baked goods…

Now you can ditch those box muffins for a version that is easy and made from scratch.  Oh, and yes they taste 100% better then any you could buy. These blueberry muffins have the perfect combination of sweetness.  Yet they are not as sweet as cake, making them a perfect choice for breakfast or a mid day snack.  

Blueberry Muffins

Cream together

1/2 cup apple sauce

1/4 cup vegetable oil

3 eggs already beaten

2 tablespoons vanilla

3/4 cup of milk

In another bowl mix together

1 tablespoon baking powder

1/2 teaspoon salt

1 1/2 cups sugar

3 cups flour (the gluten free mix if desired)

If gluten free

Add 1 1/2 teaspoon xanthen gum to flour mixture

Mix together

Add the flour mixture to the wet ingredients.  Once combined, add 2 cups of blueberries. 


Preheat oven to 350 degrees F.  Line or grease your muffin tins.  Bake for 25 minutes or until golden.

Makes (about)

1 dozen normal sized muffins and 24 mini muffins.  As you can see in the picture they go fast and the family had got to them before I could even take this picture!
